Turkey Spring Rolls
I am making these this weekend. They are light, refreshing yet filling! I love to make a double or triple batch of these and keep them in the fridge to snack on for a few days after we have them as a meal. These are one of my all time favorite things to make and eat! The peanut sauce puts it over the top! :-)
Turkey Spring Rolls
- 1/4lb Deli style Turkey or Chicken Breast
- 1 Tablespoon Gluten Free Thai Peanut Sauce
- 3 Spring Roll Wrappers
- 1C Baby Spinach
- 1/2 of a cucumber, seeded, peeled & thin sliced
- 1/3C Shredded carrots
- 1/4 of a Red Bell Pepper, seeded &thin sliced
- 2Tablespoons fresh chopped Cilantro
- Water (to brush on the spring roll wrapper)
1) Place dry spring roll wrapper on a cutting board, using a basting brush dip into the water and brush the entire surface on both sides
2) On half of the spring roll arrange spinach leaves, 1/3 of the turkey slices then drizzle on 1 teaspoon of the peanut sauce
3) Next, sprinkle with fresh cilantro, arrange some of the cucumber slices, bell pepper and carrots
4) Roll spring roll tightly starting with the side where the turkey & veggies are and finish rolling on the empty side
5) Allow to rest 3-4 minutes to set then slice into 6 equal parts and arrange on
platter
6) Serve immediately or can be made ahead 1 day
