Protein Pantry Cookies

Protein Pantry Cookies recipeFancy huh?  I named them that because I had all these loose ends of ingredients and what I mean by that is a few chocolate chips, some cranberries I've been wanting to use & some almond slivers.  

So grab whatever is in your pantry you want to use up the last of and lets make some cookies! *All asterisk items can be subbed for whatever you have available. 

Ingredients

  • 2 scoops 1stPhorm Vanilla Ice Cream Level-1 Protein (or any flavor you have!)  
  • 1C old fashioned oats
  • 1/2C oat flour
  • 1/4C chocolate chips*
  • 1/4C sliced almonds*
  • 1/4C dried cranberries*
  • 1teaspoon cinnamon
  • 1teaspoon baking soda
  • 1/4teaspoon salt
  • 1/2 Peanut Butter (or any nut butter)
  • 3 Tablespoons melted coconut oil
  • 1 egg
  • 1/4C  Stevia or Splenda
  • 1/2 teaspoon vanilla extract

Directions

1) Preheat oven to 350*
2) Line 2 baking sheets with parchment paper
3) In a large bowl, combine all dry ingredients & mix
4) In a small bowl, combine all wet ingredients and whisk well.
5) Pour the wet ingredients into the dry ingredients and mix until well combined
6) Form 24 balls (about 1" each) and place on the parchment paper and use your hand to flatten them lightly
7) Bake for 14-18 mins until the edges begin to turn golden brown.
8) Remove and place cookies onto a cooking rack and allow to cool.
9) Store at room temperature in an airtight container.
